Isoamyl alcohol (also called 3-methyl-1-butanol) is a branched-chain alcohol with the chemical formula C₅H₁₂O. It is a colorless liquid with a strong, fruity odor and is commonly found in fermented foods and beverages. Isoamyl alcohol is used as a solvent, in the manufacture of flavors and fragrances, and as an intermediate in organic synthesis. It is also a byproduct of fermentation in the production of beer and whisky.
